The spicy hard cheese “Alta Badia” is as unique as the Dolomite valley of the same name, where Ladin is spoken. It is wrapped in a firm, dry, rustic crust. The paste is straw yellow in color and has no eyes. The texture on the palate is firm, marked, but still smooth and melting. The flavor of the cheese is intense and complex with marked notes of milk, roasting, with some added potato notes. “Alta Badia” has one of the longest aging processes of Mila cheeses.
