A typically Sicilian soft cheese made from sheep’s and cow’s milk enriched with the intense flavor of black pepper.
Canestrato owes its name to the baskets used to shape it, the grooves of which can still be seen on the surface. Short aging gives Sicilian canestrato a sweet, milky flavor and smooth texture, while black peppercorns give it an intense spicy note.
