A typically Sicilian soft cheese, also known as primosale because of its salting and short aging period. Made exclusively from sheep’s milk, fresh pecorino has a sweet, lactic flavor, enriched by the intense aroma of black pepper.
On the cylindrical shape, with flat faces, the marks left by the basket can be glimpsed.
