A product made with meat from an ancient native breed of black pig: the Lomellina Black Pig. The genetics of this pig are characterized by slow conversion of nutrition, which allows the pigs to have marbled meat that transforms to give a unique taste to the palate. Salt and whole-grain peppercorns are added to the medium- to coarse-grain mixture, which is then seasoned gently with cinnamon. The mixture is placed in a natural casing, hand-tied and cured in carefully ventilated chambers. Slow aging gives the salami a soft texture, a deep ruby red color and a unique, slightly spicy taste.
