Table and grating cheese, white rind or black capped, semi-cooked paste compact white in color or with minute eyes. Tasty hard sheep’s milk cheese with a strong, intense and aromatic flavor, tending toward piquant as aging progresses. Engraved all over the heel is the inscription PECORINO ROMANO, the institutional logo, the toll gate number, and the month and year of production.
