Pecorino Toscano DOP Stagionato can be called such after a minimum of four months of aging.
With the minimum guaranteed maturation of twelve months, on the other hand, we have chosen to give a more precise connotation to a product that, precisely because of the passage of time, is able to express to the fullest all the typical fragrances and aromas of our Pecorino Toscano DOP Stagionato Classico. However, the special aging conditions, designed to maximize its organoleptic characteristics, do not affect its structure, which remains that of a pleasant table cheese.
