Pecorino Toscano DOP Fresh

Fresh Pecorino Toscano DOP is a classic soft sheep’s milk cheese made from pasteurized sheep’s milk with the addition of selected indigenous ferments, rennet and salt. The minimum maturation period is 20 days, as stipulated in the Production Regulations in order to affix the PDO mark in ink. It is generally consumed after 30-45 days, and its sweet and delicate flavor evokes the scent of the pastures of Maremma and Tuscany.
