Pecorino Toscano DOP Red Manciano

Pecorino Toscano DOP Rosso Manciano is a soft and compact cheese with a minimum maturation of 20 days, as required by the Production Regulations of Pecorino Toscano DOP, but excellent to be consumed after a maturation of 40 to 60 days. Treated in a crust with double tomato paste and Tuscan IGP extra virgin olive oil, this cheese retains the flavor of fresh milk with hints of butter and a slight acidity, characteristic of young pecorinos.
