Aged Pecorino Toscano DOP can be recognized by the PDO mark in fire. The minimum maturation period is 120 days, and its paste is slightly straw-colored and has a small amount of holes. The flavor is intense and slightly spicy. It is a cheese suitable both for table consumption and as grated or tasty ingredient to enrich traditional Tuscan and Italian dishes.
