La Cava aged provola is a Sicilian cow’s milk string cheese, made according to tradition and aged for a minimum of two months.
Hand processing by the cheesemaker causes the characteristic cracks to appear in the paste of this cheese during the ripening stage: hence the name “provola sfoglia ” or “flaky provola.” Compared to other provolas, fresh or semi-matured, this one has a more savory flavor and a more compact paste, marked by the holes.
