PDO blue-veined raw cheese of ancient tradition. The production and aging of this Gorgonzola takes place exclusively in a few provinces in Lombardy and Piedmont. A soft, straw-white paste whose green streaks are due to the process of marbling, that is, the formation of mold. Present in sweet and spicy versions.
