Today it is thought that the first lactic bacteria – also called LAB "lactic acid bacteria", made their appearance on earth at the end of the Cretaceous period, between 145 and 65 million years ago, when micro-organisms began to find a great abundance of fruits, rich in sugars, which they were able to ferment. And it is precisely this lactic fermentation discovery that has led us to discover a whole new world of species, strains, fermented food nutrition, and human and animal health and well being. Did you know that Gorgonzola is the most famous blue cheese in Italy? Yes, the marbling is one characteristic given by the presence of mould such as Penicillium roqueforti which develops in this unique cheese to produce the iconic green/blue “veins”. The secret of its creaminess however comes from another micro-organism miracle and that is the production of enzymes by the mould that are able to break down and alter the fat and protein in the cheese matrix to produce the creamy, buttery mouthfeel and its characteristic flavour. This is a slow process that develops during the careful maturation of the cheese under controlled conditions.

What is the microbiota? The microbiota is a set of microorganisms, mostly bacteria, that lives with us every day. They are about 100 thousand billion and weigh - you won't believe it - about two hundred grams of our weight. They affect our health, acting as a barrier against pathogens and regulating the absorption of nutrients, the production of vitamins, energy and the immune system, so much so that some consider it a real organ.
