The Brusati Artisan Cheese Factory was founded in 1937 by Giovanni Brusati in Trovo, a small village in the province of Pavia, located in the outskirts of the countryside. Giovanni started his business next to the barn where he raised pigs, also building his home and the cheese factory there.
Initially, he purchased milk from local farms, collecting it personally with his truck. The milk was then used to produce his first cheeses, particularly Gorgonzola , which was made fresh and sold to aging facilities.
From the 1950s to the 1980s, these aging facilities were managed by the Cariplo Warehouse in Novara , located on Via Bartolino da Novara. It was owned by the Magazzini Agricoli Novaresi (MAN) until 1968, when the company merged with the Magazzini Generali Fiduciari della Cassa di Risparmio delle Province Lombarde . The facility, covering about 80,000 square meters , included a railway siding, a special cash desk, and an internal customs center. The warehouse housed spaces dedicated to the storage and aging of Gorgonzola, as well as refrigerated rooms for preserving various goods.
