Caseificio Preziosa, known by the brand name “Mozzarella di Seriate,” was established on September 12, 1950 by its founder, Mr. Teodosio Preziosa, as an artisan workshop for the production of mozzarella and dairy products in general. Today, almost seventy years later, it is a modern food company that artisanally processes about 110,000 liters of milk daily, collected from the 40 local historical farms that still contribute the raw material in a family relationship and consolidated in tradition, thus becoming a strong boast of the company and a fundamental point of reference of territorial identity that thus represents an exclusivity in the Lombard regional panorama.
The company’s main activity focuses more on the production of table mozzarella, quality pizza mozzarella and traditional ricotta cheese still made by hand. Products with the “Mozzarella di Seriate” brand are processed from a basic concept: “this is a product that is not manufactured, but made.” The unquestionable quality of the products made at the company is given by three key factors: a processing that respects in an artisanal way the time of transformation of milk into cheese, the use of excellent quality raw materials from the territories of Bergamo, and the innovative as well as technological facilities.
The Preziosa Dairy boasts a daily production ranging from 150 to 180 quintals of fresh product, made expressly on daily orders.The process that leads to the realization of the products starts naturally from freshly milked milk cooled to a temperature of +4ยฐC and transported by tanker trucks directly to the plant, where it undergoes suitability, freshness, temperature and all hygienic and sanitary requirements tests before being processed. All milk that enters the plant is pasteurized, then cooled to 38ยฐC and sent to the coagulation plant where it is additivated with ferments and then processed into fresh curd. Attention to the product, the passion that animates the company owners and the high qualification of the production workers make “Mozzarella di Seriate” products a brand synonymous with quality, deliciousness and Made in Italy.
