Baruffaldi was founded as an artisan business at the beginning of the last century with great-grandfather Angelo and to date, thanks to the experience gained in more than 100 years of activity, the company has achieved a constant and significant development to become an important reality in the dairy sector, especially in the production of Gorgonzola DOP.
Our strengths in the production of Gorgonzola DOP are: strict selection of milk and raw materials, careful manual processing, and traditional aging on wooden boards with a static refrigeration system.
Our company is also a producer of Traditional Mascarpone used in the preparation of Gorgonzola layered with Mascarpone, a dairy specialty that is especially popular in foreign markets.
