Here with us, things have to be done as well as they used to be: and technology, when it is present, should only serve to optimize and facilitate, as well as the hygienic and sanitary aspects, a production path that must chase a primary objective: quality.
One example above all is undoubtedly the air conditioning of the ripening finishing cells, the design of which was directed, by our explicit wish, to recreate the same microclimatic conditions as the Valsassina caves where Gorgonzola cheeses were originally brought to ripen.
