Toma obtained by processing pasteurized milk, with the addition of rennet, which when brought to temperature forms a clot that is broken to obtain the initial cheese paste. After extraction, the paste finds its place in typical fascere with a concave heel. Portioned, after several turnings and salting the cheese finishes its preparation with a slow aging in the cellar. Compared to raw milk tomes, the shape is slightly wider and flattened.
