Caseificio Val D'Aveto

The Val d’Aveto Dairy was founded in 1991 with a very specific vocation: to revive the raw-milk dairy production of the San Stรจ and to safeguard the identity of this Ligurian valley, which has always had its glue in the solidarity production of cheese. There are 25 barns in the area that work to bring us milk from about three hundred Alpine Brown or Pezzata Rossa cows; for all our products we use only whole milk, which we leave intact to testify to the biodiversity between barn milk and mountain pasture milk. No tricks and no approval for products to be discovered one by one.

A territory shaped by the Aveto River and framed by the highest mountains of the Ligurian Apennines, the Aveto Valley offers a unique and evocative landscape of ancient forests, pristine landscapes, extensive pastures, and fascinating waterways. Here we live and make nature come alive, setting in motion that food chain that brings the scent of blueberry, subalpine air and peasant gestures to your tables. Our community’s herds graze happily on the rare but rich grasslands of this magical place, suspended between two horizons. Forty kilometers from the Ligurian Sea lives a mountainous nature with unusual vegetation, including roe deer, wolves, and golden eagles, and people who have sustained their territory for millennia. Those who live in nature know how to respect it. And our products carry all this, giving the scents of nature and the flavors of tradition; they are the expression of work that is intertwined with quality: of life, of air, of food.

In this pristine territory our cows work serenely, just as we in the valley are privileged to be part of a community that produces to bring to life a common heritage. We are determinedly committed to promoting the Ligurian dairy tradition and milk production in the Aveto Valley and neighboring valleys, and we are proud to say that our effort and work have created a growing industry in the area and new confidence for the livestock sector in recent years.
