Taleggio is a PDO cheese of the Bergamo dairy tradition, with very ancient origins, perhaps predating the 10th century. Aged a minimum of 35 days. The product weekly is checked, turned over and brushed with a salt and water solution. Due to centripetal ripening, its dough is uniform and firm, softer under the rind and crumblier in the center of the form.
Intense aroma accompanied by enveloping creaminess. Its delicate, sweet flavor acquires slightly sour notes with aging. Outstanding paired with berries.
