Caseificio Sociale di Manciano

In Manciano, the culture of pecorino cheese has ancient roots. The town, perched among the hills of the Maremma, preserves the traditions of yesteryear, and harkens back to a past that seems to live on in its gastronomic products, which have maintained the simplicity and authenticity that have always characterized them.

The Caseificio Sociale Manciano Societร  Agricola Cooperativa, established in 1961 by the will of a few local farmers, has reached its goal today, associating about 220 sheep and cow milk producers located in a district comprising 11 municipalities in the province of Grosseto and three in that of Viterbo. The Dairy, originally built in the town of Manciano, was moved in 1986 to Piano di Cirignano, a countryside area located in the hills of the Maremma, an unspoiled corner of a Tuscany waiting to be discovered. On this island of tranquility, pastoralism has always played a very important role in preserving nature and the land. We at the Manciano dairy move daily among our members’ farms, which have about 65,000 sheep raised.

The genuineness of the raw material is guaranteed through a special system, whereby milk is paid for according to its quality, rewarding that with the best chemical and microbiological characteristics. At every stage of processing, the manual skills of our workers remain predominant, but we make use of state-of-the-art equipment that allows us to scrupulously control the various processes. From the moment we collect milk from members’ farms and until the products are shipped, our in-house Laboratory (accredited “Accredia”) also carries out strict chemical and microbiological analysis to ensure the highest quality and food safety.
