This is the most aged version of pecorino, made exclusively from sheep’s milk, rennet, salt and milk enzymes.
The simple, artisanal-style processing , which has always been followed by our dairy, gives this Sicilian cheese an authentic, savory and strong flavor. To the eye, it has an intense straw yellow color, with surface marks left by the basket used to shape it.
