Cheese aged 45 days from whole cow’s milk, pasteurized, semi-cooked paste with enzymatic coagulation. Washed non-edible rind.
The rind is fine, yielding, weakly moist, with a pleasing ochre tending to orange coloration. The palate is well yielding, buttery, not astringent. The flavor sweet and not cloying.
Suggested pairings: Red, dry white or aromatic wines. Fruit jams. Excellent as a fondue cheese in combination with Dicrodo Nostrano cheese, Cistellino cheese, and Bajta cheese.
