For 50 years in Randazzo, on the slopes of Etna, there has been the La Cava Cheese Factory, born from the passion and insights of Carmelo La Cava. It is in this very rich and fertile territory, the crossroads of 3 major cities – Catania, Messina, Enna – and 3 protected parks – Etna Park, Nebrodi Park and Alcantara River Park – that the wisdom of shepherds and small local producers is enriched with technical expertise and technological innovation in the dairy sector.

Today, La Cava is a certified company committed to producing without harming the environment, thanks to the input of the new generation and its closeness to the land. Among the principles of the La Cava dairy is respect for artisanal craftsmanship and the rhythms of nature, working hand-in-hand with farmers to ensure the welfare and health of the animals and implementing good practices for recycling spent materials. The predilection for non-intensive livestock farms and the selection of the best milk, subjected to laboratory controls and analysis, as well as the use of indigenous strains of lactic acid bacteria for their canestrates makes the La Cava dairy one of the best dairies in Sicily.
